CARIBBEAN CUISINE
HOT PICKLED EDDOES - Serves 4-6
INGREDIENTS
10 eddoes
4 onions sliced
1/2 cup butter
2 cloves of garlic, chopped
2 tablespoons of lime juice
1 teaspoon salt
1/2 teaspoon black pepper
DIRECTIONS
1. Wash eddoes very well.
2. Boil in salted water until tender. When cool, remove skins.
3. Melt butter in a saucepan. Stir I onions, garlic, lime juice, salt and pepper.
4. Cook on a low heat until the onions are translucent.
5. Mix in eddoes coating thoroughly with the butter mixture.
6. Continue to cook for a further 10 minutes.
