SPRING ONION PANCAKES WITH HOISIN CHICKEN - Serves 4

INGREDIENTS

FOR THE PANCAKES:

1 cup plain flour
1/2 cup rice flour
3 eggs
1 1/2 cups milk
A pinch of sea salt
1 tablespoon sesame oil
4 spring onions shredded
2/3 cup hoisin sauce (available in specialist stores)
4 tablespoons soy sauce
2 tablespoons sugar
4 chicken breast fillets
6 spring onions shredded.

DIRECTIONS

1. To make the pancakes, place the plain flour, rice flour, eggs, milk, salt and sesame oil in a bowl and whisk until smooth. Stir through the spring onions. Grease a frying pan and place over medium- high heat. Pour in large spoonfuls of the pancake mixture and swirl the pan to spread the mixture thinly. Cook for 2 minutes each side or until lightly browned. Keep the pancakes warm.

2. To cook the hoisin chicken, heat a frying pan over medium heat, add the hoisin sauce, soy sauce and sugar to the pan and cook for 2 minutes. Add the chicken to the pan and cook for 5 minutes each side or until the chicken is cooked through and the sauce is thick.

3. To serve, slice the chicken into think strips and place on top of the pancakes. Spoon over a little of the pan sauce and sprinkle with shredded spring onions. Fold over the pancake to enclose into wrap. Serve with steamed vegetables.
