STUFFED PORK CHOPS - Serves 4

INGREDIENTS

4 large pork chops, about 1" thick (with bone)
4-8 thin slices of proscuitto
4 thin slices of aged cheddar
8 fresh sage leaves
Olive oil for brushing
Salt and freshly ground pepper to taste

DIRECTIONS

1. Cut a horizontal pocket into each of the pork chops. Insert 1-2 slices of proscuitto, 1 slice of cheese, and 2 sage leaves into each pocket of the pork chops. The chops may be prepared and refrigerated for about 4-6 hours before cooking.

2. Prepare the grill.

3. Brush the chops with olive oil and season with salt and pepper. Place chops on grill rack and grill, turning once. This should be approximately 8-10 minutes per side, or longer to your liking. Serve hot.
